Mamx Bowl

Are you a new parent or about to be? Someone who loves someone who is? One of the most important and potent things you can do for a new parent is to feed them nourishing & warm food. It’s such a big job to bring a baby Earthside, and Mamx’s need all the support they can get afterward. This recipe is one of my very favorite ways to rebuild and warm a new parent. Congee is a very simple rice porridge made in many East Asian countries. Traditionally, it is served to new Mamx’s, the elderly and the infirmed. It is extremely versatile and can be made sweet or savory with a variety of toppings.

⫷ Ingredients ⫸

❍ 1C Rice

❍ About 7 C purified water, broth or combination of the two

❍ ½ tsp Sea salt + more for seasoning

❍ 1 inch knob ginger peeled and sliced thin

❍ Sesame seed oil (In love with Nouka Golden Sesame Oil) 

❍ Soy sauce, Tamari, Fish Sauce and/or Coconut Aminos (Love love, Yamaki Jozo Organic Soy Sauce)

⫷ Optional Toppings ⫸

❍ Slow cooked meat, soft boiled egg, sesame seeds, sauteed or steamed vegetables, baby greens, sliced tomato, sliced green onion

❍ Stewed fruit, nuts and seeds, maple syrup

⫷ How to Make ⫸

❍ 1C rice cooked (traditionally white, I prefer a medium or short grain)

-If you have an Instant pot, 1:1 rice:water for 6 mins on high pressure, natural release

❍ Add cooked rice to IP, or to a pot on the stove, and add water/broth to cover rice by 1 inch

❍ Use saute setting on IP on low or bring to a gentle simmer on stove

❍ Stirring occasionally, being sure to not let rice stick to the bottom of pot, and adding water as needed to keep rice thinned to a porridge consistency until rice breaks down, or for about an hour. 

❍ Top with drizzle of sesame oil, soy sauce (or other from list), sprinkle of sea salt and additional optional toppings
